Easy Stuffed Dates
INGREDIENTS

12 Medjool Dates cut in half, seed removed
-
2 oz Goat Cheese plain or honey
-
1/2 cup Whole Almonds toasted
-
Drizzle of Balsamic Glaze or Honey
-
Orange Zest or Fresh Thyme optional​
INSTRUCTIONS
-
With a butter knife, spread goat cheese into cavity of date half.
-
Place 2 whole almonds on top of goat cheese.
-
Drizzle with Balsamic Glaze or Honey.
-
Top with orange zest of thyme (optional). Sprinkle with a pinch of salt.

Bacon Wrapped Stuffed Dates
INGREDIENTS

8 bacon slices (thinly sliced works better)
-
16 dates
-
4 ounces of goat cheese
-
Toothpicks​
INSTRUCTIONS

Preheat the oven to 350 degrees Fahrenheit. Slice the dates lengthwise on one side to create an opening. Remove the pit.
-
Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.

​Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.

Arrange evenly on a baking sheet with raised edges (otherwise grease will get everywhere) and bake for 10 minutes. Remove the dates and use the toothpick to turn each one so it’s laying on its side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.

Honolulu Date Squares
INGREDIENTS

Filling

2 c. dates, finely chopped (a food processor works best)

â…“ c. brown sugar

1 Tb. flour
-
1 c. water
-
1 tsp. vanilla
Crumb Mixture
-
1 c. flour
-
1 tsp. baking soda
-
2 c. old-fashioned rolled oats (or Wheaties cereal)
-
1 c. brown sugar
-
¾ c. unsalted butter, melted

INSTRUCTIONS

Heat oven to 365 degrees.
-
In a small saucepan, combine dates, brown sugar, flour and water; stir to combine. Simmer over medium/high heat until thick and bubbly (about 1-2 minutes), then remove from heat. Stir in vanilla and set aside.

In a small mixing bowl, combine dry ingredients.
-
Melt butter and pour into dry ingredient bowl. Combine until it’s crumbly (I like to use my fingers so I can feel it's totally combined)

In an 8X8 baking dish, spread half the crumb mixture into the bottom of the dish and pat with your fingers to get to the edges.

Spread the date filling all over the bottom layer and spread to edges.

Sprinkle remaining half of crumb mixture over the top.

Place in oven and cook 20 minutes.

Remove from oven and allow to cool before cutting into squares.
